  2. Desfaça e bata ligeiramente as gemas e deite a calda sobre elas, em fio, sem parar de mexer. Leve ao lume a engrossar, mexendo sempre para que não se pegue. Deixe arrefecer.
  3. Preparação da massa: Misture o açúcar com a margarina amolecida e o ovo. Junte a farinha e trabalhe a massa energicamente. Deixe repousar cerca de 30 minutos.
  4. Montagem dos Pampilhos: Estenda a massa numa superfície enfarinhada, usando um rolo também polvilhado com farinha, de forma a obter uma espessura de aproximadamente 4 milímetros (aproximadamente.).
  5. Corte com a ajuda de uma faca retângulos de 15×10 cm, numa das metades distribua uma porção de ovos-moles, polvilhe com canela e cubra com a outra metade obtendo assim retângulos de 15×5 cm.
  6. Coloque os pampilhos no tabuleiro, pincele com 1 gema de ovo e leve ao forno a 250°C cerca de 5 minutos. De seguida deixe cerca de 3 minutos, só com a resistência de cima ligada, até a zona da gema ficar tostada.
