Na imagem aparece dividido ao meio porque podem besunta-lo, numa versão mais decadente, com chantilly ou, numa versão mais saudável, com requeijão. Atenção!   2. 125 g açúcar branco
  3. 3 ovos
  4. 3 colheres de sopa leite
  5. 150 g farinha com fermento

  8. 5 colheres de sopa rasas de açúcar amarelo
  9. Uma pitada de sal

  1. Bater as claras em castelo com uma pitada de sal e reservar.
  2. Bater a manteiga à temperatura ambiente (ou opção ligeiramente amolecida no microondas), com o açúcar e a raspa de uma clementina até ficar cremoso. A manteiga tem sal para evidenciar os restantes sabores no bolo. Porém podem optar por manteiga sem sal e adicionar 1 colher de café de sal juntamente com a farinha.
  3. Juntar uma a uma as gemas batendo sempre.
  4. Continuar a bater e adicionar o leite e a farinha aos poucos.
  5. Moer as amêndoas (ou comprar já moídas) até obter uma “farinha”.
  6. Retirar a massa da batedeira e misturar com vigor a amêndoa moída.
  7. Envolver na mistura as claras em castelo.
  8. Cortar pequenos gomos de clementina como mostra na figura. Ao que resta da clementina comer duma vez só (sem desperdício).
  9. Em formas pequenas ou numa forma de buraco distribuir, após untar bem com manteiga, o açúcar amarelo e depois os gomos de clementina. Verter a massa por cima sem agitar. Levar ao forno médio (160graus) mais ou menos 40 minutos ou como prefiro controlar, até que fique o bolo dourado e depois de feito o teste do palito.
