  1. Preparação do creme Colocar no copo o leite, o açúcar amarelo e a casca de limão e programar 6 min-90º-inversa-vel colher
  2. Retirar o limão
  3. Numa taça mexer bem as gemas
  4. Programar 8 min-90º-vel 3,5 e adicionar pelo bocal as farinhas e as gemas em fio, reduzindo de seguida para a vel 2
  5. Colocar numa caixa, cobrir com película aderente (mesmo colada para não criar crosta), tapar a caixa e guardar no frigorífico
  6. Preparação da massa folhada: Dividir a placa em 3 partes (ficou cada uma com 14 cm de largura), polvilhar com açúcar (facultativo, usei 2 pacotinhos das bicas) e cozer no forno pré-aquecido a 180º até ficar loirinha (no meu forno foram uns 20 min). Usei tapetes de silicone e deixei ficar o papel onde vem a massa. Retirar e deixar arrefecer
  7. Preparação do glacé: (Pode fazer-se enquanto a massa folhada coze)
  8. Colocar no copo o açúcar e a Maizena e pulverizar 20 seg-vel 5-7-9). Esperar que o pó assente. Costumo usar papel de alumínio a tapar o copo (mas faço uns furos) para não sujar tanto a tampa. Reservar
  9. Numa taça bater a clara com o sumo de limão, com um fouet (ou garfo) até ficar branquinha sem ser em castelo e adicionar aos poucos o açúcar pulverizado reservado. Retirar 2 colheres de sopa deste glacé para outra tacinha, juntar o cacau e misturar bem
  10. Montagem do bolo: Num tabuleiro colocar uma das partes da massa folhada sempre com a parte lisa voltada para cima, espalhar creme por cima (menos de metade do creme). Colocar outra parte da massa, voltar a cobrir de creme e acabar com a última parte da massa. Com o restante creme barrar as laterais
  11. Com uma espátula cobrir o cimo do bolo com o glacé branco.
  12. Colocar o glacé castanho num saco plástico pequeno perto de um dos bicos, cortar a pontinha do bico com uma tesoura (funciona como saco pasteleiro)
  13. Fazer 2 linhas paralelas ao comprimento do bolo com este glacé, e com um palito puxar o chocolate para os lados
  14. Guardar no frigorífico ate servir
